This recipe is inspired by my Nonna’s simple yet incredibly flavorful Caprese salad, a staple in our family during the warm summer months. We’ve taken those classic Italian flavors and transformed them into a gooey, melty, utterly irresistible grilled cheese sandwich. Get ready to elevate your grilled cheese game!


Ingredients

2 slices of bread (your choice)
1 ripe avocado, sliced
1 ball of fresh mozzarella cheese, sliced
1 medium tomato, sliced
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil leaves (optional)


Instructions

  1. Heat a skillet over medium-low heat.
  2. Brush one side of each slice of bread with olive oil.
  3. Place one slice of bread, oil-side down, in the skillet.
  4. Layer the avocado slices evenly on the bread in the skillet.
  5. Add a layer of mozzarella cheese and then the tomato slices on top.
  6. Sprinkle with salt, pepper, and fresh basil leaves if desired.
  7. Top with the second slice of bread, oil-side up.
  8. Cook for about 3-4 minutes, or until the bottom slice is golden brown.
  9. Carefully flip the sandwich and cook the other side for another 3-4 minutes until golden brown and the cheese is melted.
  10. Remove from skillet, let cool for a minute, then slice and serve.

Notes

Bread Matters: Choose a good quality bread that can hold its shape and doesn’t get soggy easily.
Cheese Selection: Fresh mozzarella is a must for this recipe. You can also experiment with other cheeses like provolone or fontina.
Avocado Ripeness: Use a ripe but not overripe avocado. It should yield slightly to gentle pressure.
Tomato Variety: Use your favorite type of tomato. Heirloom tomatoes or cherry tomatoes are also delicious options.
